After reading the book recommended by my husband's cardiac surgeon I had learned that I need to count total carbs - NOT net carbs. However, before trying some recipes I was happy to discover that yes, this book lists net carbs, but it ALSO gives total carbs!One other note: I agree with all the reviews about some things not being keto that are listed in the ingredients for various recipes. However, if you are serious about trying the diet, you should do some research first to learn what this diet entails. I am just avoiding the recipes that do not fit the keto lifestyle. Not worth throwing out all the other good recipes just because a few don't make the cut!Now for a few recipes:SALMON PATTIES: First I need to clarify the instructions. They begin: 1. Remove the bones from the salmon. Put it into a bowl with the liquid. 2. Stir in the eggs, onion, flour, salt, & pepper. OK. Now what do you think you are supposed to put in the bowl with the liquid? The bones or the salmon? I was on the fence. However, "bones" would be "them". Also whatever IT is, you stir the eggs, onion, etc. INTO it. That's why I decided I was supposed to put the salmon with the liquid. DO NOT DO THIS! SERIOUSLY! If you do, you will have a bowl of soupy stuff that can NOT be shaped into patties like I did. What to do?We added more flour 3 times before I thought this was going to taste like biscuits if I could get it to cook. (I stopped adding flour LONG before it was no longer soup! I poured it into a pan to bake. The liquid just oozed out of the mess so I mopped it & mopped it up with bunches of paper towels. I finally quit & poured it into a smaller pan. Baked it at 350 for 15 minutes. Nope. Add 10-15 minutes & check again. When it finally looked baked (with the remaining egg mess at one end of the "loaf"), we ate it. Good news was that it was still tasty. But I am telling you, do NOT add the liquid to this! I have always done so in the past, but then again, I was using an entire sleeve of crackers per regular size can of salmon. Without the crackers to absorb the liquid, it was not a good thing!Will definitely make again. We LOVE salmon croquettes. But definitely going to do it without the salmon liquid. ALSO - leave the bones in & mix this by hand. The bones are our favorite part. (This is how I made this batch. Did NOT put it in a blender.)BACON CHEDDAR CHIVE OMELETTE: This was okay but nothing special. Might have been better had chives actually appeared in the recipe so I would have thought to add them. And it was good to know it had only one carb. However, the serving size was one plate, but it didn't say how many servings the recipe made so I split it with my husband giving him over half since he eats way more than I do. Still don't know if we should have had a half or whole omelette each, and this seems to be a common problem in these cookbooks: the number of servings is not given.PARMESAN EGGS: This is VERY easy, quick, and tasty. I couldn't believe it would take 15 minutes to bake 1 egg so I checked at 10 minutes. Nope. It really did take 15 minutes! Since I hate fried eggs I scrambled mine, and it worked just as well as hubby's "fried" version. I made 2 for him - each in it's own ramekin. Do NOT try to put 2 eggs in 1 ramekin! When it is done, it foamed up to the top of the dish with only 1 egg.CHEESY CHICKEN SLOW COOKER: This was very good, but taking it out of the pan was like taking it through a bottle of oil. Not adding the olive oil next time! It was not needed, and it just made a mess of the dish. I know we are supposed to be adding fats, but if they are just floating on the top (yes, I mixed it up to no avail), they are not adding anything except a messy cleanup. This is very similar to my favorite early married chicken CP dish from years ago: Put a chicken in the CP, pour a can of cream of onion soup over it, and cook however many hours needed for the temperature you select. Sauce was great over rice! (Back when I could have rice.) We did not serve this with cauliflower rice or noodles - just had it as chicken with sauce. Still yummy!GRILLED SPICY LIME SHRIMP: This was great! Had a cold front come through so I was going to make it in a skillet, but hubby said he would grill it. Didn't have skewers so he used a grill basket. Am I ever glad! The "smoky" flavor would not have happened in the skillet! Definitely another keeper!SALT AND PEPPER STIR FRIED SHRIMP: Oh, my goodness. This is scrumptious! The most time consuming part was finding/grinding the black pepper. When he finished his portion (we decided to make one recipe be 4 servings rather than 6), he emphatically said, "Keeper".BROCCOLI with CHEESE SAUCE: For some reason this left a "powdery" taste on my tongue. Could have been the unsalted butter: never used that before. Next time I will use salted butter. Otherwise it was quick, easy, and very good.KAHLUA PORK: This wasn't nearly as good as I expected. Yes, the pork was delicious, but I could only manage a few bites of the cabbage. YUK! HOWEVER, hubby thought the cabbage was fine once he added salt and pepper. (I tried that with the leftovers. Nope. Not any better for me.) So, yes, to the pork, but to each their own for the cabbage.CHICKEN-PECAN SALAD CUCUMBER BITES: I thought this could have used more mayo because it was rather dry, but my husband said the cucumber kept it plenty moist. Since we have an extra rotisserie chicken my husband bought extra cucumbers so I will make this again. He said it is "EXCELLENT!"That should be enough to get you started....
This is a real Keto book. There are appetizing photos, I want to prepare several dishes.There are interesting recipes. I love diversity. There are many recipes without complex ingredients.
This book is wonderful. This is one of the best. The recipes are practical as well as yummy.Easy to follow and tasty. I've tried a bunch of the recipes and really enjoyed them.I HIGHLY recommend this book!
Nice collection of recipes with everything needed to know in details including prep time, cooking time, servings, ingredients, instructions and nutrients per serving like, Carbohydrates, Net carbs, Fat, Protein and Calories. All the recipes are well established and well organized and also included with nice and tempting pictures. I enjoyed the book.
